Red Bourbon and Jackson
The Arabica beans for Rwanda Umusazi filter coffee belong to the Red Bourbon and Jackson varieties. These are grown in the Ngororero district in the Torero region in north-western Rwanda. The organization Community Coffee Rwanda has been supporting local small farmers with the harvest since 2019. A lot of rain falls in the Ngororero region, which poses some challenges when drying the coffee cherries.
Light filter roast
The Arabica beans from altitudes between 1,550 and 1,900 m are fermented in tanks for between 48 and 120 hours before they are then dried for 27 to 31 hours. After being sorted three times, the carefully selected wild coffee beans are lightly roasted. This elicits a taste of light nougat from the filter coffee, accompanied by notes of tangerine and grapes.
