Highest coffee farm in Nicaragua
The Las Delicias from Kalle Coffee Roasters is a very special filter coffee. It comes from the Las Delicias farm of the young coffee farmer Eleanes Mierisch. The farm is the highest in the cultivation country Nicaragua and is between 1260 and 1400 meters. The altitude leads to lower temperatures at night and thus to a slower and thus more even ripening of the coffee cherries. The Kalle roasters use the Java variety for Las Delicias.
Pronounced fruit notes
The Arabica beans of the Java variety create a light and fruity filter coffee. A light body and a rather medium acidity are guided by a pronounced range of fruit notes, including in particular pineapple, peach and passion fruit. After harvesting, the beans are processed anaerobically to develop their full aroma.
Anaerobic fermentation
Anaerobic fermentation means fermentation without oxygen. The ripe coffee cherries are hermetically sealed in barrels and the oxygen is then removed from the barrels. With the help of a so-called "water seal" the carbon dioxide produced during the fermentation process can escape. After a subsequent 31-day drying period, the beans are stored again for a month. After this storage, the coffee cherries are peeled and then the "Oro", or the green coffee bean, is left to rest for another month. This particularly complex process ensures that the aromas are particularly well balanced and makes the coffee a very special taste experience
