ELBGOLD ROASTER PORTRAIT

In 2003, during a vacation in Mexico, the idea of setting up their own roastery was born. Since 2004, the two founders Annika Taschinski and Thomas Kliefoth have been running the roastery elbgold and dedicate themselves to the best coffees in the world. In addition, they are considered pioneers of the "Third Wave Movement" in Germany. They are also jurors at the "Cup of Excellence".

ELBGOLD: THE ROASTERY FROM THE HANSEATIC CITY OF HAMBURG

The Specialty Coffee roastery elbgold and the associated cafés have achieved cult status in Hamburg within a very short time. Several cafés, meanwhile five in the hippest corners of Hamburg, bring the coffee culture to the customers. In each café, the respective preparation method can be selected, whether in the classic portafilter, in the Aeropress, in the V60 hand filter or, more recently, in the Chemex. Cuppings are also offered. The variety of flavors of elbgold coffees is complemented by delicacies from the in-house patisserie.

ELBGOLD'S DIRECT TRADE: THE COFFEE FARMER IN THE SPOTLIGHT

Everything starts with a handshake. Whether it's at the café to say hello or at origin to get to know those they work with. Coffee picking is manual labor. A lot of intuition and expertise are needed to produce the best coffees. From generation to generation, this knowledge is passed on in the families of the coffee farmers. Therefore, elbgold pursues a long-term cooperation with the same producers.

Elbgold focuses on direct trade. For the elbgold team, it is important that all the effort that goes into growing and preparing the coffee beans is appreciated. The producer, i.e. the farm, the finca or the cooperative, is the focus. As with wine, the producer is the château and quality is what matters. Regular visits to the origin are part of this. Every year, the producers are visited in the countries of origin from which the coffee is sourced.

SINGLE ORIGINS AND THE CRAFT OF COFFEE ROASTING

At elbgold, only fine highland Arabica beans are used for the coffees and espressos. Each provenance is roasted individually, single-origin. The roasting varies depending on the bean and its requirements. Some aromas change during roasting, while others develop only during the roasting process - the so-called roasted aromas. The range comprises around 15 different coffees, including directly traded filter coffees from Nicaragua and Guatemala, among others, special auctioned coffees, the winners of the "Cup of Excellence" and espressos as blends or single-origin.
