INSTRUCTION: PREPARATION HAND FILTER

First weigh the coffee beans with a coffee scale. As a guideline: 8 g of coffee per cup of 125 ml.
Now the coffee beans are freshly ground. The recommended grind for filter preparation is medium fine.
Bring water to a boil. We recommend 125 ml of water per cup. The water for preparation should have a temperature between 88 and 95 °C.
Rinse the coffee hand filter once and insert the filter paper. Small tip: It is best to bend the filter paper once at the edge so that it can then nestle against the porcelain filter without ripples. To ensure that foreign matter and the paper's own flavor are washed out of the hand filter, you should pour hot water over the filter paper once.
Wait about 30 seconds and allow the coffee powder to swell briefly. This process is called blooming.
Pour the remaining water slowly into the coffee hand filter from the center and in circular motions. Be careful not to pour too much water at once so that the coffee bed in the filter does not rise too high. The throughput time, i.e. the contact time between the coffee grounds and the water, should be between 2.5 and 3 minutes.
Remove the filter paper with the coffee grounds.
Pour the coffee and enjoy.

GENERAL

More and more coffee drinkers are preparing their coffee with a hand filter. Even though mocha pots, portafilters and fully automatic machines are now used in many German kitchens: The average German still likes his filter coffee best and drinks it most often. The hot favorite beverage is usually prepared with the classic filter machine. However, interest in coffee brewed with a hand filter is steadily increasing, and it's no longer just the hipsters in the big cities of Berlin, Hamburg and Munich who are raving about hand filter coffee.

IN ITALIA / ALL 'ITALIANA

Italian espresso remains a cult favorite. But in the meantime, Italian roasters are discovering the Third Wave movement for themselves with high-quality beans and slow preparation methods such as the coffee hand filter. By reinterpreting the light roasts, the renaissance of hand-filter coffee is also being celebrated in Italy. Filter coffee blends or special single-origin coffees are offered, whose taste characteristics also delight Italian coffee lovers.

TIPP

Single-origin coffees from the coffee hand filter can be drunk slowly: Let them cool down a bit to better taste the special flavor nuances of the respective country of cultivation in your hand filter coffee.
