WHAT'S BEHIND OMNI ROASTING

Traditionally, a distinction is made between three degrees of roasting: Light roast, medium roast and dark roast. The light roasts emphasize the acidity of the beans more, while the dark roasts have a more pronounced body. Roasting the coffee beans can look quite different in an Omni Roast. The basic idea is to slow down the roasting process, thus reducing the acidity of the coffee while improving the body and balance. The challenge, then, is to ensure that the acidity is not too dominant while also not over-extracting the coffee. In some cases, however, roastmasters set a goal of maintaining the same roast profiles. Thus, they leave it up to the baristas to create the perfect taste by means of adjustments regarding the amount of coffee used, brewing time or grind settings.
