For an even extraction of espresso, the even distribution of the ground coffee in the sieve is essential. Water always seeks the path of least resistance. If there are irregularities in the espresso puck, for example because there was a kind of hill in the sieve before tamping, or the ground coffee is lumpy, channels are created through which larger quantities of water flow than through the rest of the puck – so-called channeling. So-called levelers are very popular for distributing the espresso powder before tamping. The Eureka Leveler is one of them. The wave-shaped leveling tool is placed in the screen at an adjustable depth and rotated. As a result, the surface of the ground coffee is perfectly smooth. Then tamping as usual. Since the surface is even after leveling, vertical rope is particularly easy.

Elegant attitude

On the side of the immersing stainless steel part, which fits in standard 58 mm sieves, you can see a scale which, depending on the setting, is covered by the spacer on the portafilter. In this way, it is possible to set with millimeter precision how deep the smoothed surface should be in the sieve. In this way, the leveler can be adapted exactly to your own needs, depending on the sieve, dosage and type of coffee.
